Creamy Zucchini Pasta & a Giveaway

For everyone out there desperately waiting for my Project Runway recap for this week, just hold on another day or two. I have lots going on this week, but thanks to the miracle that is TiVo - the latest episode is holding for my viewing pleasure.


While you're waiting, enter my giveaway and try this recipe for a way to use up all those fresh zucchini from your garden. Or your parents garden. Or your neighbors garden. Or all three. Or if you're like me, you just buy it at the store. I got this recipe from the mother of an old college boyfriend, who still calls me every year or two. What can I say? The moms always loved me, even if the boys didn't. So if anyone from the Redd family is out there reading this - thanks for the recipe! Just like zucchini, this pasta is best fresh - the sauce tends to separate on reheating.



Creamy Zucchini Pasta


1 box (16 oz.) mosticcoli pasta, or ziti, rigatoni, etc.

3 medium or 5 small zucchini, cut in chunks or strips

1 large onion, minced

1 garlic clove, minced

2/3 c. heavy cream

3/4 c. Parmesan cheese

1/2 lb. chicken, cubed


Cook the pasta according to directions. Saute the zucchini in olive oil until limp and lightly brown and remove to drain on paper towels. Add onions, garlic, and chicken to the pan and saute until golden. Stir in cream, increase heat if necessary, and boil until reduced by one third. Add cooked pasta, zucchini, Parmesan cheese, and salt & pepper. Toss until heated through and serve immediately. Top with additional Parmesan.

Ahh...I love it when you give away books. This one sounds really good and yummy. I would love to win it, if IRL friends can enter.

Truthfully, I don't know how well-rounded I am. I try to balance all my responsibilities, but sometimes the scales tip more one way than another. Basically, I just try to keep my head above the water :) I admit I don't have a lot of skills (I'm not much of a DIYer or crafter or anything thing like that) - however, I love all the ideas I get from people (like Tara) who DO have all the skills. That's why I enjoy this blog so much!

I'm a new reader to your blog - came over here from Bloggin' 'bout Books where I am fairly new too! I'm always happy to find LDS women doing their thing on the 'net :) As for the balancing act - I'm not sure I get it right all the time! It's probably more of a 60% of the time thing. I have been working on becoming more of a DIYer this year and so far so good...I mean, the shelves are still up and haven't torn a huge hole in the wall as I was envisioning and if the blue paint in my son's room isn't exactly *light* blue, well it's still blue :)

So I do try with being well-rounded but I love to learn from others who seem to do so much better at it than myself!!

Can I write about how I"m trying to be well-rounded? Right now I feel lopsided between being a Mom to my one year old and a Graduate student. I'm lacking greatly when it comes to being a cook and a housekeeper for our family! Just look at our house and it's obvious! The scale will also attest to the lack of good being served. And someday I want to paint and re-decorate my house that needs it so badly! In the mean time I just have to graduate and then I might have more time to get myself well rounded!

Besides the fact that I literally am well rounded, I'm a mom of seven monkeys, chef, coach, teacher, crafter, counciler, you get it. Moms are the most well rounded people I know! It's an awesome job, would never trade it in for another.

I guess I'm a well rounded woman, taking care of the kids, training a puppy and being a wife - along with trying to keep the house from falling apart around me!

I think I am well rounded- since I do mom duty- crafts- baking- and still manage to work part time and read for fun. And, with the help of the cookbook I could become more well rounded since my DH actually cooks most of the time....

How am I well rounded? Well I would like to be and am constantly picking up new hobbies and interests so that keeps me on my toes. Of course I try to stick to the basics and I love your explanation of what it is to be well rounded. I look forward to checking out this blog in the future. And I also look forward to winning this book. :)

I love this giveaway! This cookbook looks really fun...I think I'm well-rounded because I am a stay-at-home mom who works hard to keep my house organized and a haven for my family, but I also make time for myself and spend a lot of time reading and researching things and trying new ideas.

i heart this fun cookbook! i don't know how well-rounded i am . . . i guess i try my best and am happy with that. being a mom is my most favorite thing so i try and not get to stressed about things that don't really matter . . . thanks, kristen.

OHH how i would love to learn to cook with my one arm i have available! :)
I know I'm well-rounded because I already am instilling thiings in my child ... like love for the outdoors, love for music, the gift of art and markers and crayons! I have gone through so much in so little time i know I am one to give counsel and also one to learn new things.
Life is all about doing new things and introducing things to your children. Life is all about becoming well-rounded.

Well, I can't say i'm pro at being well-rounded but I try to be as i'm a mom of 2, a wife of a dental student, aka single parent! I take care of the house responsibilites and finances plus I stay sane through my hobbies of scrapbooking and crafts...and that doesn't even touch my internet hobbies!! PHew! But I have seen this book and have been wanting it so we'll see what happens!!

This looks like a great book!!! I am so excited.

Well lets see I feel more like an oval more than rounded most of the time but I do my best to balance being a mommy, a military wife and a cosmetologist all at the same time. I am so lopsided sometimes I just feel lucky to get the kitchen counter wiped off but its my life and I love it!!

Well rounded. Well balancing my slices of time between 1 husband, 5 kids, 1 busy church calling, and the various things that all mommies do - keeps me rolling. I love to read, sew, play with my kids, exercise, and finding things that make life enjoyable. This book looks like one of those things! Thanks for the chance.

I love reading through new cookbooks--and have lots of experience cooking one-armed! I am well-rounded because of all the hats I wear: mom, wife, research analyst, author, nursery leader, homemaker, and many more! I have learned to make sure I balance things well or life isn't any fun.

I am well rounded because while I try to tend to my family and my parents I still try to do things for myself. I love to knit but don't get too much chance. I try to cook (I bake better). I try to go to the gym and workout. I try to do charity work. Sometimes I wonder if there are enough hours in the day and days in the week.
